Demerara Sugar

Definition and Description
Demerara sugar is a type of raw cane sugar known for its large, amber-colored crystals and mild molasses flavor. It is minimally processed, retaining more of the natural molasses from the sugarcane juice, which gives it its distinctive color and taste.

Demerara sugar does not have a specific E number as it is a natural product and not classified as a food additive.

Source and Processing
Demerara sugar is derived from sugarcane. The process begins with extracting the juice from sugarcane stalks, which is then clarified and evaporated to form a thick syrup. This syrup is crystallized to produce raw sugar crystals. The crystals are then dried to produce Demerara sugar, which retains a light coating of molasses, giving it its characteristic color and flavor.

Uses in Food Products
Demerara sugar is commonly used in baking and cooking. It is often sprinkled on top of baked goods like muffins, cookies, and cakes to add a crunchy texture and a caramel-like flavor. It is also used in beverages such as coffee and tea, where its mild molasses flavor complements the drink without overpowering it. Additionally, Demerara sugar can be used in sauces, marinades, and salad dressings to add sweetness and depth of flavor.

Benefits
Demerara sugar, being less refined than white sugar, retains some of the minerals found in sugarcane juice, such as calcium, iron, and potassium. These minerals are present in small amounts but can contribute to overall nutritional intake. The presence of molasses in Demerara sugar also means it has a slightly lower glycemic index compared to highly refined sugars, leading to a slower increase in blood sugar levels.
